Some days I go down to my soapy dungeon and do not come up for hours. The next thing I know my family is home and I still have to cook dinner. Well not anymore I love my crock-pot and I do not feel guilty for using it. I also love my rice cooker. Some days I will use both and it makes my day more productive. Working at home has its own challenges. When you have to have time for home chores and work. I break down my day (more on that later) but I plan out the week with 3-4 crock-pot meals to give me extra time to make soap or other goodies. This is one of my families favorite meals. To make it a little healthier I use whole wheat egg noodles or brown rice. You can also use light sour cream and cream cheese.
Easy Beef StroganoffThings you will need:
- 3 lbs. beef stew meat
- 1 large onion, chopped (1 cup)
- 2 cans condensed cream of mushroom soup
- 1 can condensed cream of onion soup
- 1 (8 ounce) can sliced mushrooms, drained
- 1⁄4 teaspoon pepper
- 2 cups water
- 1 (8 ounce) container cream cheese, cubed
- 1 1/2 cups sour cream
- Dash of hot sauce
- ½ teaspoon crushed garlic
- Dash of salt
- 6-8 cups hot cooked noodles or you can eat over rice -6 cups rice
This recipe is so easy to put together. Just mix beef, onion, soups, mushrooms, garlic, hot sauce, salt, water and pepper into slow cooker. Cover and cook on low heat for 8 to 10 hours or until beef is very tender. Stir cream cheese and sour cream into beef mixture until cream cheese is melted. Serve beef mixture over noodles or rice. Make a simple salad and some garlic bread and dinner is done.
***If I know I have a really busy day I will put everything in the crock pot and cover, then place in refrigerator and in the morning just put it in the base and plug in .
